The Ingredients
Firstly, gather the ingredients you will need for the soup. You may already have many of these on hand. Here’s what goes into the soup:
- 1 cup of dry orzo or other pasta sub zoodles or GF pasta
- 1 tablespoon of olive oil
- 1/2 cup of finely chopped celery
- 1 cup of finely chopped onion
- 1 tablespoon of minced garlic
- 2 cups of sliced carrots
- 1/2 teaspoon of dried parsley
- 1/2 teaspoon of pepper
- 1/4 teaspoon of dried thyme
- 4 bay leaves
- 5-pound boneless, skinless chicken breasts
- 6 cups of low or no-salt chicken broth
- 1/2 cup of lemon juice, freshly squeezed (off to the side)
- 1/2 teaspoon of salt

The InstaPot Process
You can make this delicious soup in a crockpot or on the stove. However, many people love the InstaPot process because it’s so fast. Moreover, the final results will still yield the taste you want. For the InstaPot method, you’ll want to begin by chopping all the vegetables. In the meantime, set the InstaPot to sauté for 10 minutes. You should heat the olive oil in a pan and cook the celery, onion, and garlic until they feel soft. Furthermore, these veggies should be fragrant at this point.
Next, stir in the spices and carrots. Place the whole chicken breasts on top of the vegetables and spices in the InstaPot. Cover this with chicken broth; however, don’t add the lemon juice at this point. You will want to cover the pot and set it to Sealing. Then pressure-cook it for 12 minutes.
Meanwhile, bring a pot of water to a boil and cook the pasta according to the package directions. Quickly release the pressure on the pot once the soup has cooked. Moreover, remove the bay leaves from the broth and take out the chicken. Lastly, shred the chicken and add it, along with the lemon juice and cooked pasta, to the pot.
